The days are finally getting longer but January is the time that we all turn to warm comforting foods. Often these will be higher in Vitamin K but here's a few soups and stews that make a perfect winter's meal. Cannellini Bean Soup is so warm and comforting and is delicious with a salad of Roasted Beets and Fennel. White Chili is a great meal and is fantastic when getting together with friends. Jicama salad is a wonderful choice to warm up your winter. Creme Caramel makes the perfect finish to any meal and is safe for CoumadinÂ® (warfarin) users. Eat well, eat healthy, enjoy life!
